When Peter Moore wants to put mutton bird on the menu of his pub, The Royal Mail on Spencer, he doesn't head to The Chicken Pantry at the Queen Victoria Market (although he could). He drives to Lilydale Airport and flies his Cherokee six-seater to Flinders Island, off the Tasmanian coast, to buy it direct from the source.
